DIY: Home-made “kanelada”, Kos’ most aromatic refreshment

Trying the local gastronomy is an integral part of travelling. Taste is what completes your multisensory journey to each and every place you visit, and the taste of Kos lies in its local specialties and traditional recipes: tomato spoon sweet, local honey, krasotyri (wine-cheese), soumada and kanelada!

Kanelada is a local refreshment made from “kanela”(cinnamon). It’s quite popular among the locals, especially during the summer. Sweet, refreshing and aromatic, it can be prepared easily at home, to bring up all your sweet memories from the summers you’ve spent on Kos.

Ingredients

1 kg sugar
1 ½ litre water
5 cinnamon sticks
15 cloves
1 tsp red food coloring

Directions

Put all the ingredients (except for the food colouring) in a saucepan and simmer for about an hour.

Remove the pan from the heat and add about a tablespoon of red food coloring to get a more intense color.

After cooling, remove the cinnamon sticks and the cloves and store it in a glass bottle in the refrigerator.

To serve, dilute the “kanelada” syrup with cool water (1 part syrup, 4 parts water). If you want, add ice for an extra refreshing outcome!

Tip: Instead of still water, you can use sparkling water to dilute the syrup if you like.
